Fireweed is a pioneer species which grows following forest fires. Highly prized and known as the ?Champagne of Honeys’, fireweed honey producers take hives high into the mountains and in rare cases may have to fend off Grizzly and Black Bears! Notes of subtle fruit and delicate sweetness are captured in this deliciously thick, slow to crystallize honey. Crystallization is a normal process and does not change the potency of the honey. Just heat it slightly to de-crystalize. Do no heat over 40 degrees.
